  • 1 tablespoon butter
  • 1.2 kg Hokkaido pumpkin
  • 1 kg starchy potatoes
  • 1 clove garlic
  • 200 ml milk
  • 200 ml cream
  • 1 teaspoon dried rosemary
  • Freshly grated nutmeg (to taste)
  • 200 g grated cheese
  • Salt and pepper

Instructions

  1. Preheat your oven to 200 °C (392 °F) and grease a large baking dish with butter.
  2. Wash, seed, and slice the Hokkaido pumpkin and peel and slice the potatoes into thin rounds. Layer them in the baking dish, sprinkling lightly with salt.
  3. Finely chop the garlic. In a mixing bowl, whisk together milk, cream, garlic, rosemary, nutmeg, half of the cheese, salt, and pepper. Pour over the layered vegetables.
  4. Sprinkle remaining cheese on top and season with extra salt and pepper.
  5. Bake for 40–45 minutes until tender and golden brown.
  6. Serve hot and enjoy!
