  • 1 cup frozen corn
  • 210 ounce cans fire roasted tomatoes and green chiles
  • 215 ounce cans cannellini beans
  • 1/2 cup buffalo sauce
  • 2 cups low sodium chicken broth
  • 4 oz cream cheese (room temperature)
  • 4 oz cottage cheese (blended)

Instructions

  1. Prepare your slow cooker by adding all ingredients except cream cheese and cottage cheese. Stir well.
  2. Cover and cook on low for 4-6 hours or high for 3-4 hours until chicken is cooked through.
  3. Remove chicken, shred it using forks or a hand mixer, and return to the slow cooker.
  4. Blend in the cream cheese until smooth, then add shredded chicken back in and cook on low for an additional 30 minutes.
  5. Lastly, stir in blended cottage cheese before serving.
