  • 1 lb boneless, skinless chicken breasts/thighs
  • 1 (15 oz) can cannellini beans
  • 1 (15 oz) can great northern beans
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 1 (4 oz) can diced green chiles
  • 2 cups chicken broth
  • 2 tbsp lime juice
  • 8 oz softened cream cheese
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder
  • 2 tbsp cilantro (fresh, chopped)

Instructions

  1. Prepare by chopping onions and garlic. Drain both cans of beans.
  2. In a large bowl, combine drained beans, diced green chiles, onion, garlic, cumin, oregano, salt, black pepper, chili powder, lime juice, chicken broth, and cilantro. Mix well.
  3. Place the boneless chicken on top of the mixture in the slow cooker.
  4. Cover and cook on low for 7 hours or high for 4 hours.
  5. Once done, shred the chicken using two forks and stir back into the chili mixture.
  6. Serve warm with optional toppings like sour cream or tortilla chips.
