  • 2 (14.5 oz) cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup chopped yellow onion
  • 2 cloves garlic, chopped
  • 1 tsp salt
  • 1½ tsp dried oregano
  • ¾ tsp dried thyme
  • 1 tbsp ground cumin
  • Lemon wedges for serving

  • Chopped red onion for serving

Instructions

  1. Chop the onion and garlic; drain and rinse the white beans.
  2. In the crockpot, combine chicken breasts, white beans, chicken broth, onion, garlic, salt, oregano, thyme, and cumin.
  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender.
  4. Shred the chicken with two forks and return it to the pot; stir well.
  5. Serve warm with desired toppings such as lemon wedges and avocado slices.
