  • 1 can black beans (drained and rinsed)
  • 1 can corn (undrained)
  • 10 ounces Rotel tomatoes with green chilis (undrained)
  • 1 packet ranch seasoning
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • ½ cup water
  • 8 ounces cream cheese

Instructions

  1. Spray the bottom of the crockpot with nonstick cooking spray.
  2. Layer chicken breasts at the bottom.
  3. Add black beans, corn, Rotel tomatoes, ranch seasoning, cumin, chili powder, onion powder, and water; mix well.
  4. Place cream cheese on top without stirring.
  5. Cover and cook on low for 6-8 hours or high for 4 hours until chicken shreds easily.
  6. Stir to combine and serve hot with your favorite toppings.
