  • 1/2 medium Onion (diced)
  • 2 medium Zucchini (sliced thinly)
  • 2 tsp Dried basil
  • 4 cloves Garlic (minced)
  • 7 large Eggs
  • 1/3 cup Heavy cream (or non-dairy alternative)
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 1/3 cup Cheddar cheese
  • 1/3 cup Mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. In a non-stick skillet, heat olive oil over medium heat and sauté diced onions until translucent (about 5 minutes).
  3. Add sliced zucchini and dried basil; cook until softened and lightly browned (around 5 minutes).
  4. Create a well in the center, add minced garlic, sauté for 1 minute, then mix with zucchini.
  5. Layer half the vegetable mixture in a pie pan, sprinkle with half the cheese, add the rest of the vegetables followed by remaining cheese.
  6. In a bowl, whisk eggs with heavy cream, sea salt, and black pepper until well combined.
  7. Pour egg mixture over layered veggies and cheese.
  8. Bake for 30-35 minutes until set; let cool slightly before slicing.
