Ingredients

  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids and rings

Instructions

  1. Cut the ginger in half; cube one half and shred the other.
  2. Simmer the ginger cubes in water for 1 hour and 15 minutes. Drain, reserving ½ cup of the liquid.
  3. Chill the cooked ginger in the fridge for at least 4 hours.
  4. In a large pot, combine chilled ginger, reserved water, and sugar. Bring to a boil for 1 minute.
  5. Stir in liquid pectin and simmer for an additional 7 minutes, skimming off any foam.
  6. Sterilize jars by boiling them in water.
  7. Fill each jar with marmalade, leaving about ¼ inch at the top, then seal with lids.
  8. Process jars in boiling water for 15 minutes to seal.
  9. Cool completely before storing in a cool, dark place.
