- 1/2 cup mayonnaise

- 1/4 cup sweet pickle relish

- 1/2 teaspoon paprika (for garnish)

Instructions
- Boil the potatoes: In a large saucepan, cover baby gold potatoes with water and add kosher salt. Bring to a boil and cook until fork-tender (about 12 minutes). Drain and let cool slightly.
- Scoop out the centers: Cut each potato in half lengthwise and use a melon baller to scoop out the insides, leaving about an 1/8-inch border.
- Prepare the filling: Mash the scooped potato flesh in a bowl. Mix in mayonnaise, mustard, pickle relish, green onions, pepper, and additional salt if needed.
- Assemble and serve: Spoon or pipe the filling back into each potato shell. Sprinkle with paprika and garnish with chives if desired. Serve immediately or chill until ready.
