Ingredients
- 2 lb vine tomatoes
- 1/2 cucumber
- 1 red pepper
- 1 shallot
- 2 cloves garlic
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Fresh basil for garnish
Instructions
- Prepare the tomatoes by boiling them briefly to peel easily. Cut an 'X' in the bottom of each tomato and boil for 30 seconds, then transfer to ice water.
- In a mixing bowl, combine chopped tomatoes, cucumber, red pepper, shallot, garlic, olive oil, lemon juice, salt, and pepper. Mix well and let sit for at least 20 minutes.
- Transfer everything to a blender and blend until smooth.
