Ingredients

  • 2 lb vine tomatoes
  • 1/2 cucumber
  • 1 red pepper
  • 1 shallot
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 2 tbsp lemon juice

Instructions

  1. Prepare the tomatoes by boiling them briefly to peel easily. Cut an 'X' in the bottom of each tomato and boil for 30 seconds, then transfer to ice water.
  2. In a mixing bowl, combine chopped tomatoes, cucumber, red pepper, shallot, garlic, olive oil, lemon juice, salt, and pepper. Mix well and let sit for at least 20 minutes.
  3. Transfer everything to a blender and blend until smooth.
  4. Chill in the refrigerator for at least 2 hours before serving. Serve garnished with fresh basil.
