  • 14.5 oz can diced tomatoes, undrained
  • 4 cups tomato juice
  • 1 cup ketchup
  • 2 cans (15 oz each) pinto beans, undrained
  • 1 can (16 oz) kidney beans, undrained
  • 1/4 cup red apple vinegar
  • 1 tablespoon light brown sugar
  • 3 tablespoons chili powder
  • 3/4 teaspoon garlic salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (or more if you want it spicier)
  • Cornmeal (to thicken if desired)

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat. Add diced onion and sauté until translucent (about 5 minutes).
  2. Stir in ground beef; cook until browned while breaking it into small pieces. Drain excess grease.
  3. Add red apple vinegar and cook for 1 minute. Mix in diced tomatoes, tomato juice, ketchup, both types of beans, brown sugar, and spices.
  4. Bring to a boil then reduce heat to medium-low. Simmer uncovered for at least one hour, stirring occasionally. For thicker chili, stir in cornmeal as desired.
  5. Serve hot with optional toppings like sour cream or shredded cheese.
