- 2 cans (15 oz each) pinto beans, undrained
- 1 can (16 oz) kidney beans, undrained
- 1/4 cup red apple vinegar
- 1 tablespoon light brown sugar
- 3 tablespoons chili powder
- 3/4 teaspoon garlic salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper (or more if you want it spicier)
- Cornmeal (to thicken if desired)
Instructions
- Heat olive oil in a large soup pot over medium-high heat. Add diced onion and sauté until translucent (about 5 minutes).
- Stir in ground beef; cook until browned while breaking it into small pieces. Drain excess grease.
- Add red apple vinegar and cook for 1 minute. Mix in diced tomatoes, tomato juice, ketchup, both types of beans, brown sugar, and spices.
- Bring to a boil then reduce heat to medium-low. Simmer uncovered for at least one hour, stirring occasionally. For thicker chili, stir in cornmeal as desired.
