- 1 pound mild Italian sausage
- 1 cup chopped yellow onion
- 1 cup diced carrots
- 1 cup diced celery
- 3 cloves garlic (minced)
- 24 ounces spaghetti or marinara sauce
- 1 quart beef broth
- 15 ounces canned diced tomatoes
- 1 teaspoon Italian seasoning
- 1 teaspoon basil
- 1 cup dry ditalini pasta
- 15 ounces canned dark red kidney beans (drained and rinsed)
- 15 ounces canned great northern beans (drained and rinsed)
Instructions
- In a large stock pot, heat a tablespoon of olive oil over medium-high heat. Brown the sausage, breaking it into crumbles. Drain fat and set aside.
- Add another tablespoon of oil to the pot, sautéing onions, carrots, and celery until soft. Stir in minced garlic for an additional minute.
- Return sausage to the pot and mix in spaghetti sauce, beef broth, diced tomatoes, and spices. Bring to a boil; lower heat and simmer for 15–20 minutes.
- Cook ditalini pasta according to package instructions until al dente; drain.
- Add cooked pasta and both types of beans to the soup, cooking together for a few more minutes. Adjust consistency with water if needed.
- Serve hot, garnished with freshly grated Romano or Parmesan cheese.
