  • 2 tablespoons olive oil
  • 1 pound mild Italian sausage
  • 1 cup chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic (minced)
  • 24 ounces spaghetti or marinara sauce
  • 1 quart beef broth
  • 15 ounces canned diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon basil
  • 1 cup dry ditalini pasta
  • 15 ounces canned dark red kidney beans (drained and rinsed)
  • 15 ounces canned great northern beans (drained and rinsed)

Instructions

  1. In a large stock pot, heat a tablespoon of olive oil over medium-high heat. Brown the sausage, breaking it into crumbles. Drain fat and set aside.
  2. Add another tablespoon of oil to the pot, sautéing onions, carrots, and celery until soft. Stir in minced garlic for an additional minute.
  3. Return sausage to the pot and mix in spaghetti sauce, beef broth, diced tomatoes, and spices. Bring to a boil; lower heat and simmer for 15–20 minutes.
  4. Cook ditalini pasta according to package instructions until al dente; drain.
  5. Add cooked pasta and both types of beans to the soup, cooking together for a few more minutes. Adjust consistency with water if needed.
  6. Serve hot, garnished with freshly grated Romano or Parmesan cheese.
