  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans, drained
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies
  • 1/2 cup water or chicken broth
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sauté the chopped onion until translucent, about 5 minutes.
  2. Add ground turkey and cook until browned, breaking it apart as it cooks.
  3. Stir in tomato paste and spices (chili powder, garlic powder, cumin, smoked paprika, cayenne) until well combined.
  4. Mix in drained kidney beans, diced tomatoes with juices, and water or broth. Bring to a gentle boil.
  5. Reduce heat to low and simmer for 15-20 minutes, stirring occasionally.
  6. Season with salt and pepper before serving hot with your choice of toppings.
