  • 2 Tablespoon butter
  • 3/4 lb top sirloin cubes
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 3 Tablespoons chives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a heavy-bottomed skillet, heat butter and olive oil over medium-high heat. Add seasoned sirloin cubes; brown on all sides for about 6-8 minutes.
  3. Add chopped onion and carrots; cook until softened, about 4-5 minutes.
  4. Sprinkle flour over the mixture; stir for another minute. Pour in apple cider and beef broth; bring to a boil.
  5. Transfer to an oven-safe pan, cover, and bake for 1 – 1½ hours.
  6. While baking, boil potatoes until tender, then mash with milk, sour cream, cheddar cheese, and chives until creamy.
