  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • A small handful of fresh cilantro, chopped
  • 1/2 cup reduced-fat cream cheese, softened
  • 1/4 cup half-and-half cream
  • Sliced jalapeños
  • Sliced avocados
  • A dollop of sour cream
  • Chopped fresh cilantro
  • Tortilla strips
  • Grated monterey jack or Mexican cheese

Instructions

  1. Chop the onion and garlic; rinse the beans.
  2. In the slow cooker, combine all ingredients: chicken breasts, onion, garlic, broth, beans, green chilies, and corn.
  3. Add spices (salt, black pepper, cumin, oregano, chili powder, cayenne) and mix gently.
  4. Cover and cook on low for about 3 hours.
  5. Once cooked, shred the chicken and return it to the pot with cream cheese and half-and-half. Stir until blended.
  6. Serve hot with desired toppings.
