Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  2. In another bowl, combine milk, egg, vanilla extract, and melted butter until well mixed.
  3. Add wet ingredients to dry ingredients and stir until just combined. Gently fold in diced peaches.
  4. Heat vegetable oil in a heavy-bottomed pot to 350°F (175°C).
  5. Drop spoonfuls of batter into hot oil and fry for about 2–3 minutes per side until golden brown.
  6. Remove with a slotted spoon and drain on paper towels.
  7. Prepare the glaze by whisking together powdered sugar, milk (or cream), and vanilla extract until smooth.
