  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup crushed peppermint candies (divided)
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Melt the butter in a microwave-safe bowl or on the stovetop, then let it cool slightly.
  3. In a large mixing bowl, combine the melted butter and sugar, mixing until smooth. Add eggs and vanilla, mixing well.
  4. In another bowl, whisk together flour, cocoa powder, and salt. Gradually add this to the wet ingredients until combined.
  5. Fold in half of the crushed peppermint candies and optional chocolate chips.
  6. Pour the batter into the prepared pan, spreading it evenly. Top with remaining crushed peppermint candies.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out with moist crumbs.
  8. Allow to cool before cutting into squares.
