- 3 to 4 tablespoons heavy cream (for frosting)

Instructions
- Preheat your oven to 350°F (175°C) and prepare two round baking pans by greasing them.
- In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
- In a stand mixer bowl, beat the softened unsalted butter and granulated sugar together on medium speed until light and fluffy.
- Gradually add in vegetable oil, vanilla extract, and buttermilk while mixing on low speed.
- Add egg whites one at a time into the batter, mixing on low speed until fully blended after each addition.
- Slowly add the dry mixture into the wet ingredients and mix until just combined; gently fold in the rainbow jimmies.
