  • 1012 medium shrimp
  • 1 cup broccoli florets
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1 tsp paprika
  • Salt & black pepper to taste
  • 1 cup milk

Instructions

  1. Boil peeled and cubed potatoes in salted water until fork-tender (about 12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
  2. In a skillet, heat olive oil over medium heat. Add broccoli and diced peppers; season with salt and pepper. Sauté for about 4-5 minutes until tender yet vibrant.
  3. In another skillet, melt butter with olive oil. Sauté minced garlic for about 30 seconds until fragrant, then add shrimp seasoned with paprika, salt, and pepper. Cook for approximately 2-3 minutes per side until pink and slightly golden.
  4. Serve by spooning mashed potatoes on one side of the plate while arranging shrimp and veggies on the other side.
