Ingredients
- 3 medium potatoes
- 10–12 medium shrimp
- 1 cup broccoli florets
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 2 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic
- 1 tsp paprika
- Salt & black pepper to taste
- 1 cup milk
Instructions
- Boil peeled and cubed potatoes in salted water until fork-tender (about 12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
- In a skillet, heat olive oil over medium heat. Add broccoli and diced peppers; season with salt and pepper. Sauté for about 4-5 minutes until tender yet vibrant.
- In another skillet, melt butter with olive oil. Sauté minced garlic for about 30 seconds until fragrant, then add shrimp seasoned with paprika, salt, and pepper. Cook for approximately 2-3 minutes per side until pink and slightly golden.
- Serve by spooning mashed potatoes on one side of the plate while arranging shrimp and veggies on the other side.
