  • 1 cup mushrooms, sliced

  • Fresh parsley, chopped (for garnish)

  • 56 cherry tomatoes, halved
  • 2 tbsp feta cheese, crumbled

Instructions

  1. For the Mushroom & Scrambled Egg Toast: Heat olive oil in a skillet over medium heat. Sauté sliced mushrooms for about 5 minutes until golden brown. In a separate pan, scramble eggs on low heat until soft. Toast rustic bread until golden brown. Top the toast with sautéed mushrooms and scrambled eggs, garnishing with fresh parsley.
  2. For the Avocado & Tomato Toast: Toast another slice of rustic bread until crisp. Spread or layer sliced avocado generously over the toast. Arrange halved cherry tomatoes on top and sprinkle crumbled feta cheese. Season with salt and pepper, then garnish with fresh parsley.
  3. Serve both toasts side by side for an appealing breakfast spread.
