  • 2.5 lbs Yukon gold potatoes
  • 2 cups chicken broth (or vegetable broth)
  • ½ cup olive oil
  • ½ cup lemon juice
  • 5 cloves garlic (minced)
  • 1 tbsp dried oregano
  • ½ tbsp paprika
  • 1 tbsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut the potatoes into thick wedges or cubes, then place them in a large roasting pan.
  3. Add chicken broth, olive oil, lemon juice, minced garlic, oregano, paprika, and salt to the pan. Toss well to coat the potatoes evenly.
  4. Cover with aluminum foil and roast for 40 minutes.
  5. Remove from the oven, toss the potatoes again, cover, and roast for another 25 minutes until fork-tender.
  6. Uncover and roast for an additional 15 minutes or until golden brown.
