- 1 chicken breast, cut into chunks
- 1 cup sweet potatoes, peeled & cubed
- 1 cup broccoli florets
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Toss sweet potato cubes in half the olive oil, smoked paprika, salt, and pepper. Spread on a baking tray and roast for 20-25 minutes until golden brown.
- Season chicken chunks with garlic powder, onion powder, salt, and pepper. Heat a grill pan over medium heat with a bit of oil and grill chicken for 6-8 minutes until fully cooked.
- In another pan, heat remaining olive oil. Sauté broccoli florets for about 5-6 minutes until bright green and tender.
- Assemble the plate by arranging grilled chicken alongside roasted sweet potatoes and sautéed broccoli. Drizzle with lemon juice if desired.
