  • 8 cups chopped romaine lettuce
  • 4 cups diced watermelon
  • 2 1/2 tbsp golden balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic, crushed
  • Seasoned salt (to taste)
  • 4 oz soft goat cheese (optional)
  • 1 tsp water
  • 1 tbsp chopped shallots
  • 1/8 tsp kosher salt
  • Pinch fresh black pepper

Instructions

  1. In a small bowl, mix golden balsamic vinegar, water, shallots, kosher salt, and black pepper. Gradually whisk in olive oil until well combined.
  2. Season shrimp with seasoned salt and crushed garlic. Thread onto soaked wooden skewers.
  3. Preheat grill to medium-high heat. Grill shrimp for about 1 to 2 minutes on each side until pink and cooked through.
  4. Toss chopped romaine with dressing in a large bowl until coated. Serve on plates topped with diced watermelon, crumbled goat cheese, and grilled shrimp.
