  • 4 Roma tomatoes
  • 1 tsp garlic powder
  • Kosher salt and black pepper (to taste)
  • 1 cup shredded Monterey Jack cheese
  • 2 Tbsp grated Parmesan cheese
  • Oil (for brushing the grill)
  • 1 tsp dried oregano
  • 1 tsp dried parsley

Instructions

  1. Preheat your grill to medium heat.
  2. Cut each Roma tomato in half lengthwise and scoop out the seeds.
  3. Season the insides with garlic powder, salt, and pepper.
  4. Fill each tomato half with about 2 tablespoons of Monterey Jack cheese and top with a teaspoon of Parmesan cheese.
  5. Brush the grill grates with oil and place the prepared tomatoes on the grill.
  6. Close the lid and grill for about 4–5 minutes until the cheese is melted but tomatoes remain firm.
