Ingredients

  • ½ pound thinly sliced beef ribeye or chuck eye
  • ½ large yellow onion, thinly sliced
  • ½ cup water
  • 4 tablespoons fruit juice instead of mirin
  • 3 tablespoons soy sauce (light sodium)
  • 1 tablespoon granulated sugar
  • 2 cups cooked white rice (hot)
  • Pickled red ginger (optional)
  • Green onion (thinly sliced, optional)

Instructions

  1. In a saucepan, mix water, fruit juice, soy sauce, sugar, and add onions; stir well.
  2. Cover and simmer over medium heat to meld flavors.
