Ingredients

  • 175 g Baking spread (or unsalted butter, softened)
  • 175 g Caster sugar
  • 3 large Eggs
  • 2 tsp Vanilla extract
  • 175 g Self-raising flour
  • 25 g Black food coloring
  • 200 g Unsalted butter (for frosting)
  • 400 g Icing sugar
  • 12 tbsp Milk
  • Green food coloring
  • Yellow food coloring
  • 150 g Tinned custard (for filling)
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat the oven to 140C Fan/325F/Gas Mark 3 and line a cupcake tin with cases.
  2. In a bowl, beat together baking spread and caster sugar until fluffy. Add eggs and vanilla, mixing well.
  3. Fold in self-raising flour and black food coloring until combined.
  4. Divide the batter into cases and bake for 25-30 minutes until a skewer comes out clean. Cool on a wire rack.
  5. Once cooled, create holes in the cupcakes, mix green food coloring into tinned custard, and fill each hole.
  6. For frosting, beat together unsalted butter and icing sugar until smooth; add milk and color to achieve desired hue.
  7. Frost each cupcake generously and decorate with candy eyes and sprinkles.
