  • 1/4 cup heavy cream
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Make the crust: Mix flour and salt, work in cold butter until crumbly. Add ice-cold water, form into a disk, wrap, and chill for at least 20 minutes.
  2. Preheat oven to 375°F (190°C). Roll out dough, fit into tart pan, dock base with a fork, and pre-bake for about 15 minutes.
  3. Sauté mushrooms in olive oil until golden brown; season lightly and set aside.
  4. In a bowl, whisk pumpkin purée with heavy cream, sage, nutmeg, and pepper until smooth. Fold in sautéed mushrooms.
  5. Spread filling into pre-baked crust and bake for an additional 25-30 minutes until golden brown.
