  • 8 oz walnuts
  • 15 small jarred cherries (48g)
  • 1 1/4 lbs mixed crystallized fruits (367g)
  • 12 oz pitted dates, coarsely chopped (340g)
  • 3 oz raisins (85g)
  • 2 oz sliced pineapple, diced (57g)
  • 1 cup all-purpose flour (125g)
  • 1 teaspoon baking powder
  • 3/4 teaspoon ground allspice
  • 3/4 teaspoon ground cloves
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup granulated sugar (132g)
  • 1/2 cup butter (113g)
  • 2 eggs
  • 1/4 cup dark corn syrup (60ml)
  • 1/8 cup juice from the canned pineapple and jarred cherries (30ml)

Instructions

  1. Preheat oven to 350°F (175°C) and grease your bundt pan.
  2. In a mixing bowl, combine flour, baking powder, spices, and salt.
  3. Cream butter and sugar until light and fluffy in another bowl.
  4. Mix in eggs one at a time, followed by dark corn syrup.
  5. Gradually blend dry ingredients into wet mixture until just combined.
  6. Fold in fruits and nuts using a rubber spatula.
  7. Pour batter into prepared pan and bake for 60 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
