Ingredients
- 6 tablespoons olive oil
- 1 large onion (finely chopped)
- 5 large ripe tomatoes (finely chopped)
- 2 garlic cloves
- 1 small green bell pepper (stem & seeds removed)
- 1 small zucchini
- 4 large carrots (peeled)
- 1 small stick of celery
- 2 tablespoons tomato paste
- 1–2 sprigs fresh thyme
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and caramelize until golden.
- Stir in chopped tomatoes; cook until they soften.
- Add chopped zucchini, bell pepper, carrots, and celery to the pot.
- Cook for 5 minutes while stirring occasionally.
- Mix in tomato paste and thyme; cook for another 2 minutes.
- Pour in about 2 liters of water, cover partially, and simmer for 1 hour.
- Blend the soup using an immersion blender until creamy.
- Serve hot topped with garlic croutons or fresh herbs.
