  • 6 tablespoons olive oil
  • 1 large onion (finely chopped)
  • 5 large ripe tomatoes (finely chopped)
  • 2 garlic cloves
  • 1 small green bell pepper (stem & seeds removed)
  • 1 small zucchini
  • 4 large carrots (peeled)
  • 1 small stick of celery
  • 2 tablespoons tomato paste
  • 12 sprigs fresh thyme

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and caramelize until golden.
  2. Stir in chopped tomatoes; cook until they soften.
  3. Add chopped zucchini, bell pepper, carrots, and celery to the pot.
  4. Cook for 5 minutes while stirring occasionally.
  5. Mix in tomato paste and thyme; cook for another 2 minutes.
  6. Pour in about 2 liters of water, cover partially, and simmer for 1 hour.
  7. Blend the soup using an immersion blender until creamy.
  8. Serve hot topped with garlic croutons or fresh herbs.
