  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups whole wheat flour

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9" x 5" loaf pan with parchment paper.
  2. In a mixing bowl, mash the bananas until smooth. Add zucchini, egg, olive oil, maple syrup, and vanilla; whisk until well combined.
  3. Stir in the cinnamon, baking powder, baking soda, and salt. Gradually mix in the flour until just combined.
  4. Pour the batter into the prepared loaf pan and level with a spatula. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
