  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups whole wheat or spelt flour
  • Cooking spray
  • 1/2 cup walnuts (coarsely chopped) (optional)

Instructions

  1. Preheat your oven to 350 degrees F. Line your 9 x 5 loaf pan with unbleached parchment paper and spray it lightly with cooking spray. Set the pan aside.
  2. In a large mixing bowl: Add the egg, applesauce, honey, vanilla, cinnamon, baking soda, baking powder, and salt. Whisk these ingredients together until well combined. Stir in the shredded zucchini until evenly mixed.
