  • 1 tablespoon cornstarch
  • 2 large eggs
  • ¾ cup granulated sugar (for topping)
  • ½ cup sour cream or plain Greek yogurt
  • ¼ cup all-purpose flour (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, cream together the butter and sugar. Add flour and salt until crumbly. Press this mixture evenly into the bottom of the pan to form the crust and bake for 15 minutes.
  3. While the crust cools, mix diced peaches, sugar, lemon juice, and cornstarch in another bowl. Spread this peach mixture over the pre-baked crust.
  4. For the topping, whisk eggs, sugar, sour cream (or yogurt), flour, and vanilla until smooth. Pour this over the peach layer in the pan.
  5. Bake for an additional 35–40 minutes until set and lightly golden. Cool completely before cutting into squares.
