Ingredients
- 3 lbs lamb shoulder (bone-in or boneless)
- 2 tablespoons olive oil
- 1 large onion (sliced)
- 4 cloves garlic (smashed)
- 1 cup beef or vegetable broth
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper (to taste)
- 1/2 cup fresh mint leaves (finely chopped)
- 1/4 cup flat-leaf parsley (finely chopped)
- 2 garlic cloves (minced)
- Lemon zest (for gremolata)
Instructions
- Preheat oven to 300°F (150°C) if using a Dutch oven; set slow cooker on low.
- Heat olive oil in the Dutch oven over medium-high heat. Season lamb with salt, pepper, rosemary, and thyme. Sear all sides until golden brown.
- Remove lamb and add sliced onions and garlic to sauté until fragrant.
