Ingredients

  • 3 lbs lamb shoulder (bone-in or boneless)
  • 2 tablespoons olive oil
  • 1 large onion (sliced)
  • 4 cloves garlic (smashed)
  • 1 cup beef or vegetable broth
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper (to taste)
  • 1/2 cup fresh mint leaves (finely chopped)
  • 1/4 cup flat-leaf parsley (finely chopped)
  • 2 garlic cloves (minced)
  • Lemon zest (for gremolata)

Instructions

  1. Preheat oven to 300°F (150°C) if using a Dutch oven; set slow cooker on low.
  2. Heat olive oil in the Dutch oven over medium-high heat. Season lamb with salt, pepper, rosemary, and thyme. Sear all sides until golden brown.
  3. Remove lamb and add sliced onions and garlic to sauté until fragrant.
  4. Deglaze pot with broth, scraping up browned bits.
  5. Return lamb to the pot, cover with a lid, and cook for 4–5 hours in the oven or 6–8 hours in a slow cooker until tender.
  6. While cooking, mix finely chopped mint leaves, parsley, minced garlic, and lemon zest in a bowl for gremolata.
  7. Once cooked, let the lamb rest briefly before slicing and serve topped with gremolata.
