  • 4 chicken drumsticks
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper
  • Salt to taste
  • 4 medium potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil (for vegetables)
  • 1/2 tsp paprika (for vegetables)
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 200C (400F).
  2. In a large bowl, toss chicken drumsticks with olive oil, paprika, oregano, garlic powder, salt, and pepper until coated.
  3. In another bowl, mix potatoes, carrots, bell pepper, and onion with olive oil and seasonings.
  4. Spread vegetables in a baking dish and place seasoned chicken on top.
  5. Roast for 50-55 minutes, turning chicken halfway through until golden brown and cooked through.
  6. Garnish with chopped parsley before serving.
