- 1 leg quarter (bone-in, skin-on) chicken
- 1 tsp olive oil
- 1 tsp dried thyme or Italian seasoning
- Salt & pepper, to taste
- 1 clove garlic, minced
- 1 cup green beans, trimmed
- 1 tsp olive oil or butter
- 1 garlic clove, minced
- Salt & black pepper to taste
- 1 cup baby carrots
- 1 tsp olive oil
- 1 tsp honey or maple syrup
- Pinch of salt & black pepper
Instructions
- Preheat the oven to 400°F (200°C). Rub the chicken leg quarter with olive oil, season with thyme, garlic, salt, and pepper. Roast for 35-40 minutes until golden and juices run clear.
- Toss baby carrots in olive oil, honey (or maple syrup), salt, and pepper. Spread on a baking sheet and roast for about 25-30 minutes until tender.
