  • 1 leg quarter (bone-in, skin-on) chicken
  • 1 tsp olive oil
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper, to taste
  • 1 clove garlic, minced
  • 1 cup green beans, trimmed
  • 1 tsp olive oil or butter
  • 1 garlic clove, minced
  • Salt & black pepper to taste
  • 1 cup baby carrots
  • 1 tsp olive oil
  • 1 tsp honey or maple syrup
  • Pinch of salt & black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Rub the chicken leg quarter with olive oil, season with thyme, garlic, salt, and pepper. Roast for 35-40 minutes until golden and juices run clear.
  2. Toss baby carrots in olive oil, honey (or maple syrup), salt, and pepper. Spread on a baking sheet and roast for about 25-30 minutes until tender.
  3. In a skillet over medium heat, sauté minced garlic in olive oil or butter before adding green beans. Cook for 6-8 minutes until bright and blistered.
  4. Serve the roasted chicken alongside glazed carrots and garlic green beans.
