Ingredients
- 1 egg yolk
- 2 tablespoons heavy cream or whole milk
- 1 ¼ cup all-purpose flour
- ½ cup unsalted butter (cold)
- 8 ounces goat cheese
- 2–3 tablespoons heavy cream
- 1 can medium California Ripe Olives (green or black)
- Fresh herbs: parsley and chives
- 2 medium lemons (zested and juiced)
Instructions
- In a food processor, combine flour, sugar, salt, and pepper. Add cold butter cubes and pulse until crumbly.
- Whisk egg yolk and heavy cream together; add to the processor and pulse until combined. Chill the dough for at least 30 minutes.
- Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface; cut into circles for tartlet pans.
- Press dough into pans, fill with a mixture of goat cheese, heavy cream, lemon zest, parsley, chives, salt, and pepper.
- Bake for about 20 minutes until golden brown.
- For topping: mix olives with olive oil, garlic, lemon juice & zest, salt, pepper, parsley, and chives.
- Once baked and slightly cooled, top tartlets with olive mixture.
