Description

Ingredients

  • 1 egg yolk
  • 2 tablespoons heavy cream or whole milk
  • 1 ¼ cup all-purpose flour
  • ½ cup unsalted butter (cold)
  • 8 ounces goat cheese
  • 23 tablespoons heavy cream
  • 1 can medium California Ripe Olives (green or black)
  • Fresh herbs: parsley and chives
  • 2 medium lemons (zested and juiced)

Instructions

  1. In a food processor, combine flour, sugar, salt, and pepper. Add cold butter cubes and pulse until crumbly.
  2. Whisk egg yolk and heavy cream together; add to the processor and pulse until combined. Chill the dough for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface; cut into circles for tartlet pans.
  4. Press dough into pans, fill with a mixture of goat cheese, heavy cream, lemon zest, parsley, chives, salt, and pepper.
  5. Bake for about 20 minutes until golden brown.
  6. For topping: mix olives with olive oil, garlic, lemon juice & zest, salt, pepper, parsley, and chives.
  7. Once baked and slightly cooled, top tartlets with olive mixture.
