  • 3 tablespoons sugar
  • 1.5 tablespoons cornstarch
  • 2 teaspoons fresh lemon juice
  • 1 package of pre-made pie crust (2 in a pack)
  • 1 egg (for egg wash)
  • 3/4 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Prepare the blueberry filling by cooking fresh blueberries in a medium saucepan over medium heat until soft. Stir in sugar, cornstarch, salt, and lemon juice until thickened.
  2. Preheat the oven to 425°F (220°C).
  3. Roll out the pie crust and cut out 16 circles using a pie cutter.
  4. Assemble the hand pies by placing filling on half of the circles, topping them with the other half, and sealing edges with a fork.
  5. Brush the tops with an egg wash before baking for about 20 minutes until golden brown.
  6. Make a glaze with powdered sugar and milk to drizzle on cooled pies.
