Ingredients

  • Carrots
  • Olive oil
  • Cinnamon
  • Lemon juice
  • Greek yogurt
  • Feta cheese
  • Cooked chickpeas
  • Honey
  • Rose harissa paste
  • Salt and black pepper

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Trim and toss the carrots in olive oil, cinnamon, salt, and pepper on a roasting tray.
  3. Roast for 30 minutes until tender.
  4. While carrots roast, prepare the green sauce by mixing chopped carrot tops with lemon juice and olive oil in a pestle and mortar.
  5. In a bowl, whisk together Greek yogurt and crumbled feta until smooth; season to taste.
  6. Add drained chickpeas to the tray with carrots and roast for another 15 minutes until crispy.
  7. Combine honey and harissa paste in a small bowl.
  8. Drizzle the honey-harissa mixture over roasted carrots and chickpeas before serving over whipped feta.
