  • 8 oz jar oil-packed sun-dried tomatoes (chopped)
  • 1 large onion (diced)
  • 3 large carrots (diced)
  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • 5 cups chicken broth
  • 112 oz can evaporated milk
  • 2 cups cooked chicken (shredded or chopped)
  • 1 pound shelf-stable gnocchi
  • 34 oz baby spinach

Instructions

  1. In a large pot or Dutch oven, heat reserved sun-dried tomato oil over medium heat. Sauté the diced onion, carrots, and celery for about 5 minutes until softened.
  2. Add chopped sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper. Sauté for another minute.
  3. Stir in tomato paste and chicken base with flour until well combined. Cook for another minute.
  4. Pour in the chicken broth while scraping browned bits from the pot. Bring to a simmer and partially cover with a lid; reduce heat to low and simmer for about 15 minutes.
  5. Add shredded chicken, spinach, evaporated milk, and gnocchi into the pot. Cook over medium-low heat for an additional 5-10 minutes until heated through.
  6. Serve immediately topped with grated parmesan cheese.
