- 80 g Unsalted Butter
- ½ tsp Salt
- 2 tsp Sugar
- 150 g All-purpose Flour

Instructions
- Prepare the choux pastry by combining milk, water, butter, salt, and sugar in a saucepan. Heat until melted. Stir in flour until it forms a ball and let it cool slightly before mixing in eggs one at a time.
- Preheat the oven to 200°C (400°F). Spread half of the pastry on a lined baking sheet and bake for about 30 minutes until golden brown. Repeat with the remaining dough.
- For the diplomat cream filling, heat milk until steaming. Whisk eggs with sugar and cornstarch; gradually add hot milk while whisking. Cook until thickened; stir in vanilla and beat in room temperature butter.
- Assemble by layering choux pastry on a platter, spreading diplomat cream on top, adding the second layer of pastry, and dusting with powdered sugar before serving.
