  • ½ cup Water
  • 80 g Unsalted Butter
  • ½ tsp Salt
  • 2 tsp Sugar
  • 150 g All-purpose Flour
  • 4 Eggs
  • 2 cup Milk
  • 2 Eggs
  • ⅔ cup Sugar
  • 50 g Cornstarch
  • 2 tsp Vanilla Extract
  • ¾ cup Unsalted Butter (room temperature)
  • Powdered Sugar

Instructions

  1. Prepare the choux pastry by combining milk, water, butter, salt, and sugar in a saucepan. Heat until melted. Stir in flour until it forms a ball and let it cool slightly before mixing in eggs one at a time.
  2. Preheat the oven to 200°C (400°F). Spread half of the pastry on a lined baking sheet and bake for about 30 minutes until golden brown. Repeat with the remaining dough.
  3. For the diplomat cream filling, heat milk until steaming. Whisk eggs with sugar and cornstarch; gradually add hot milk while whisking. Cook until thickened; stir in vanilla and beat in room temperature butter.
  4. Assemble by layering choux pastry on a platter, spreading diplomat cream on top, adding the second layer of pastry, and dusting with powdered sugar before serving.
