  • 2 lbs ground beef
  • 1 1/2 cups panko bread crumbs
  • 1 large onion (finely diced)
  • 8 cloves garlic (crushed)
  • 2 tbsp gochujang
  • 5 green onions (minced)
  • 2 large eggs (lightly beaten)
  • For the glaze: 3 tbsp apricot jam
  • 2 tbsp gochujang
  • 1 tbsp rice apple vinegar
  • 1 tbsp honey
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp granulated garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a frying pan, heat vegetable oil over medium heat. Add the diced onion and sauté until translucent (about 10 minutes). Add crushed garlic and cook for another 2 minutes. Remove from heat and let cool.
  3. In a large bowl, combine cooled onion mixture with minced green onions, gochujang, eggs, and kosher salt.
  4. In another bowl, mix ground beef and panko breadcrumbs together. Combine both mixtures gently without overmixing.
  5. Shape the mixture into a loaf on a baking sheet or in a loaf pan.
  6. Bake in the preheated oven until it reaches an internal temperature of 140°F (60°C), about 40 minutes.
  7. Prepare the glaze by mixing apricot jam, gochujang, rice apple vinegar, honey, soy sauce, sesame oil, and garlic powder in a small bowl.
  8. Once the meatloaf hits 140°F, spread the glaze evenly over the top and bake for an additional 10–15 minutes until it reaches an internal temperature of 160°F (71°C).
