  • 1 tbsp olive oil
  • 1 bay leaf
  • 1 cup dry green or brown lentils
  • 2 carrots, sliced
  • 4 cups vegetable broth
  • 1 onion, diced
  • 1 tsp thyme
  • Salt and pepper, to taste
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 large potatoes, peeled and chopped
  • 4 tbsp plant-based butter
  • 1 cup plant-based milk

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion, sliced carrots, and celery until soft.
  2. Stir in minced garlic and cook for 1 minute. Add lentils, diced tomatoes, vegetable broth, thyme, bay leaf, salt, and pepper.
  3. Bring to a boil then simmer for 25-30 minutes until lentils are tender.
  4. Meanwhile, boil chopped potatoes in salted water until tender. Drain and mash with butter and milk until smooth.
  5. Serve a generous scoop of mashed potatoes topped with lentil stew.
