- 150g bow-tie (farfalle) pasta
- 200g tofu, sliced into 0.5-inch thick fillets
- 500ml vegetable stock
- 150ml plant-based cream
- 1 tbsp (15g) butter
- 2 shallots, finely diced
- 2 cloves of garlic, minced
- 5–6 sun-dried tomatoes, finely diced
- 2 tbsp tomato puree
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp smoked paprika
- 1 tsp cayenne chili pepper
- 2 tsp oregano
- Salt & pepper, to taste
- 1 handful fresh basil
- 1 tbsp cornflour
- 3 tbsp oil, to fry
Instructions
- Sauté finely diced shallots in butter until soft.
- Add minced garlic, sun-dried tomatoes, tomato puree, and seasonings; stir well.
- Pour in vegetable stock and bring to a boil; add pasta and simmer until cooked.
- Stir in plant-based cream; check pasta doneness and adjust cooking time if necessary.
- Prepare crispy tofu by coating slices in seasoned cornflour; fry until golden brown.
- Serve pasta topped with crispy tofu and garnish with fresh basil.
