Ingredients

  • 150g bow-tie (farfalle) pasta
  • 200g tofu, sliced into 0.5-inch thick fillets
  • 500ml vegetable stock
  • 150ml plant-based cream
  • 1 tbsp (15g) butter
  • 2 shallots, finely diced
  • 2 cloves of garlic, minced
  • 56 sun-dried tomatoes, finely diced
  • 2 tbsp tomato puree
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp smoked paprika
  • 1 tsp cayenne chili pepper
  • 2 tsp oregano
  • Salt & pepper, to taste
  • 1 handful fresh basil
  • 1 tbsp cornflour
  • 3 tbsp oil, to fry

Instructions

  1. Sauté finely diced shallots in butter until soft.
  2. Add minced garlic, sun-dried tomatoes, tomato puree, and seasonings; stir well.
  3. Pour in vegetable stock and bring to a boil; add pasta and simmer until cooked.
  4. Stir in plant-based cream; check pasta doneness and adjust cooking time if necessary.
  5. Prepare crispy tofu by coating slices in seasoned cornflour; fry until golden brown.
  6. Serve pasta topped with crispy tofu and garnish with fresh basil.
