Ingredients

  • 250g mixed dried fruit
  • 250ml hot, strong black tea
  • 2 tbsp caster sugar
  • 175g self-raising flour
  • 1 tsp mixed spice
  • 1 beaten egg

Instructions

  1. In a mixing bowl, combine mixed dried fruit, caster sugar, and hot black tea. Cover and let soak overnight.
  2. Preheat your oven to 160°C (fan 140°C/gas 3).
  3. Once soaked, mix the self-raising flour, mixed spice, and beaten egg into the fruit mixture until well combined.
  4. Pour the mixture into a greased and lined 900g loaf tin and bake for 1 to 1¼ hours or until a skewer inserted comes out clean.
  5. Allow cooling on a wire rack before slicing.
