Ingredients
- 2 pounds Yukon Gold potatoes (sliced thin)
- 1/2 tbsp avocado oil
- 1 tbsp unsalted butter
- 1 green chili (or serrano chili)
- 3 cloves garlic (minced)
- 1 small onion (finely chopped)
- 1/2 green bell pepper (finely chopped)
- 2 tbsp tomato paste
- 2 tsp coriander powder
- 1/2 tsp cumin powder
- 1/4 tsp turmeric powder
- 1 tsp red chili powder
- 1/4 tsp cardamom powder
- 2 tablespoons butter (for cheese sauce)
- 2 1/2 tablespoons flour
- 2 cups milk
- 1 teaspoon salt
- 2 cups grated sharp cheddar cheese (reserve some for topping)
- 1/2 tsp garam masala
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add avocado oil and butter. Once melted, sauté onion, bell pepper, garlic, and green chili until soft.
- Stir in tomato paste and spices; cook for an additional minute.
- For the cheese sauce, melt butter in a saucepan over medium heat. Whisk in flour for about two minutes before gradually adding milk.
- Cook until thickened; then remove from heat and stir in salt and cheese.
- In a baking dish, layer half of the sliced potatoes followed by half of the sautéed mixture and half of the cheese sauce. Repeat layers.
- Cover with foil and bake for 60 minutes; remove foil, sprinkle reserved cheese on top, then bake uncovered for an additional 30 minutes until golden brown.
- Allow to cool slightly before serving.
