  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 pounds lean ground beef (you can replace 1/2 of the beef with chicken if you like)
  • 1/2 cup milk
  • 2 large eggs
  • ¾ cup breadcrumbs
  • 2 tablespoons ketchup
  • 1 ½ teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (or dried parsley; plus more for garnishing)
  • 3/4 cup ketchup (for topping)
  • 1/4 cup brown sugar (packed)
  • 2 tablespoons apple cider vinegar

Instructions

  1. Preheat your oven to 350°F.
  2. In a skillet, melt butter over medium heat and sauté the chopped onion for 3–4 minutes until soft, then add garlic and cook for an additional 30 seconds.
  3. In a mixing bowl, combine the sautéed onions and garlic with ground beef, breadcrumbs, eggs, milk, and seasonings. Mix until just combined.
  4. Shape the mixture into a loaf in a meatloaf pan.
  5. Bake for about 40 minutes.
  6. While baking, mix together ketchup, brown sugar, and vinegar for the glaze.
  7. After 40 minutes, glaze the meatloaf and return it to the oven for another 20–30 minutes.
  8. Let it rest for about 10 minutes before slicing and serving.
