  • 1 grilled chicken breast, sliced
  • 2 eggs
  • 1 avocado, sliced
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 2 tbsp crumbled feta cheese
  • 2 tbsp Kalamata olives
  • 1 tbsp extra virgin olive oil
  • 1 tsp apple vinegar or lemon juice
  • Salt & black pepper to taste

Instructions

  1. Boil the eggs for 7-8 minutes until cooked to your liking. Cool in ice water before peeling and quartering.
  2. In a large bowl, combine chopped romaine lettuce, diced cucumber, and halved cherry tomatoes.
  3. Top the salad base with sliced grilled chicken, avocado pieces, egg quarters, crumbled feta cheese, and Kalamata olives.
  4. Drizzle with olive oil and apple vinegar or lemon juice; season with salt and black pepper. Garnish with parsley if desired. Serve immediately for the best flavor.
