  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for the swirl)
  • 1 tablespoon cinnamon (for the swirl)

Instructions

  1. Preheat your oven to 350°F and line a 9×5 inch loaf pan with parchment paper.
  2. In a large bowl, combine shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until well mixed.
  3. In a separate bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add dry ingredients to the wet mixture, stirring until just combined; avoid overmixing.
  5. For the cinnamon swirl, mix granulated sugar and remaining cinnamon in a small bowl.
  6. Pour half of the batter into the prepared pan; sprinkle with half of the cinnamon mixture. Add remaining batter on top and finish with the rest of the cinnamon sugar.
  7. Use a knife to gently swirl through the batter for a marbled effect.
  8. Bake for 60–65 minutes or until golden brown and a toothpick comes out clean.
  9. Allow cooling in the pan for about 10–15 minutes before slicing.
