- 1/2 cup Semi-sweet chocolate chips
- 1/2 cup Milk chocolate chips
- 1/2 cup All-purpose flour

- 1/2 tsp Baking soda
- 1/8 tsp Baking powder
- 1/4 tsp Salt
- 1/4 cup Unsalted butter (room temperature)
- 1/3 cup Brown sugar (packed light or dark)
- 1/8 cup White granulated sugar
- 1/4 cup Peanut butter (creamy)
- 1 tsp Pure vanilla extract
- 1 Large egg (room temperature)
- 1/2 cup Quick oats
- 1/2 cup Mini chocolate chips
- 1/2 cup Mini M&Ms
Instructions
- Preheat your oven to 350°F (175°C). Grease your baking pan or line it with parchment paper for easy removal later.
- In a large mixing bowl, combine sugar, eggs, egg yolk, butter, oil, and vanilla extract. Mix until smooth using an electric mixer.
- Gradually add flour, cocoa powder, cornstarch, and salt. Mix until well combined. Fold in semi-sweet and milk chocolate chips.
- Pour the brownie batter into the prepared baking pan. Spread it evenly across the bottom using a rubber spatula.
- In another bowl, combine flour, cornstarch, baking soda, baking powder, and salt.
- In a separate bowl, cream together room temperature butter with brown sugar and white sugar until fluffy.
- Mix in peanut butter and vanilla extract. Add in the egg while mixing well.
- Gradually incorporate dry ingredients along with oats, mini chocolate chips, and M&Ms.
- Spoon the monster cookie mixture over the brownie layer. Spread gently to cover evenly but do not worry about perfection; some brownie showing is fine.
- Bake in preheated oven for 35-40 minutes or until a toothpick inserted comes out mostly clean (a few moist crumbs are ideal).
