  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon smoked paprika
  • 1 tablespoon fresh cilantro
  • 2 teaspoons ground cumin
  • 3 cloves garlic, minced or grated
  • 1 inch fresh ginger, grated
  • Kosher salt, to taste
  • 1/4 cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup pitted green olives, torn
  • 1 pinch crushed red pepper flakes

Instructions

  1. In a zip-top bag, combine chicken, olive oil, yogurt, smoked paprika, chopped cilantro, garlic, ginger, cumin, and salt. Seal and massage the marinade into the chicken. Refrigerate for at least 15 minutes or overnight.
  2. Preheat your grill or grill pan over medium-high heat. If using skewers, thread marinated chicken onto them.
  3. Lightly brush skewered chicken with olive oil and cook on the grill for about 10 to 12 minutes until cooked through and charred.
  4. In a mixing bowl, whisk together lemon juice, lemon zest, olive oil, chopped cilantro, torn olives, crushed red pepper flakes, and salt.
  5. Plate grilled chicken skewers and drizzle generously with herby lemon olive vinaigrette before serving.
