  • 1 cup mixed dried fruits (raisins, currants, or chopped dried cherries)
  • 1/2 cup candied citrus peel, chopped
  • 1/4 cup apple juice for soaking

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg until blended.
  3. In another bowl, beat softened butter and sugar until fluffy. Add eggs one at a time and mix well.
  4. Stir in molasses and buttermilk until fully combined.
  5. Gradually add dry ingredients to wet mixture; mix until just combined.
  6. Fold in nuts and dried fruits evenly throughout the batter.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for about 75 minutes or until a toothpick inserted comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.
